Forest Honey

Intense and balsamic, from the oaks and holm oaks of Gavarres.

Mas Entreserra's Forest Honey is a raw, artisanal honeydew honey, harvested exclusively in the Gavarres, an emblematic mountain range in Baix Empordà, Catalonia, full of holm oak and oak Mediterranean forests. As a family business with over 25 years of experience, we produce this honey using a cold extraction process, never heating it, to preserve its enzymes, vitamins, and natural properties. With the "Venda de Proximitat" label awarded by the Departament d'Agricultura, Ramaderia, Pesca i Alimentació of the Generalitat de Catalunya, we guarantee a local, sustainable, and top-quality product.

This honey does not come from flower nectar, but from honeydew secreted by insects on trees like holm oak and oak, giving it a unique composition rich in minerals such as iron, magnesium, potassium, and calcium, according to studies in "Food Chemistry" (2019). It is high in phenolic antioxidants and polyphenols, which combat oxidative stress and reduce cardiovascular risks, as shown in PubMed reviews (2022). Its antibacterial properties, thanks to methylglyoxal and hydrogen peroxide, are effective against pathogens like Staphylococcus aureus, according to University of Cardiff research (2018). It has anti-inflammatory effects that relieve arthritis and improve digestion via prebiotics, supported by studies in "Antioxidants" (2020). For colds, it reduces cough better than some medications, according to Cochrane Library (2017). On the skin, its humectant and antimicrobial properties help heal wounds and reduce acne, as shown in dermatological studies.

Flavor and Culinary Uses

The flavor is intense and less sweet, with salty, resinous, and malty notes, depending on the honeydew from holm oak and oak. Color dark amber almost black, aroma of wet wood and earth.

Culinary uses: Perfect for winter infusions without altering taste, like tea with lemon for energy. Pairs with cured or blue cheeses, like a Catalan goat cheese with forest honey for salty-sweet contrast. In cooking, use it in sauces for roasted meats: mix with mustard and herbs to glaze ribs. Ideal for intense dressings in salads with nuts, or in desserts like toasted bread with fresh cheese. As it is raw, avoid heating above 40°C to maintain properties.

In summary, this honey is a superfood with proven medicinal effects, perfect for a healthy and sustainable life.
