There are two main types of heather honey: from common heather (Erica spp.), generally sweeter and caramelized with salty and malty notes, and from ling heather (Calluna vulgaris), more bitter and intense with woody and tangy touches. Our honey from the Gavarres is mainly the sweet type from Erica, but in some seasons it can have a bitter touch due to climatic variations or mixtures. It is rich in polyphenols, thymol, and antioxidants, according to studies in "Antioxidants" (2020), which help combat oxidative stress. Its antibacterial properties, demonstrated in University of Cardiff research (2018), make it effective against bacteria like Staphylococcus aureus.
